Rest In Peace Captain Harris



My husband and I LOVE to watch The Discovery Channels, Deadliest Catch. Its this amazing show that follows a bunch of crab fishermen as they do their thing. It blows us away how hard these guys work, so that we can have yummy crab to eat. We are sad to hear that Captain Harris, one of the stars of the show, has passed away. He was a rough and tumble guy AND a loving father whose entire world revolved around making sure his sons were successful and happy. To celebrate his memory, I thought I would post his recipe for

Captain Harris' Crab Stuffed Mushrooms
36-40 medium white mushrooms
8 ounces cream cheese/spreadable cheese, flavored, softened
2 cups chopped cooked crab meat, snow or king crab
1/2 cup grated cheese (can be smoked cheese)
DIRECTIONS:
De-stem and scrape out the caps of mushrooms. Spray with oil. Bake mushroom caps at 350* for 5 to 7 minutes to soften.
Prepare the crab meat stuffing: Break up and coarsely chop the crab meat. Place in a bowl and blend with cream cheese. Once thoroughly combined, spoon crab mixture into mushroom caps and sprinkle with shredded cheese. Broil 6 inches from broiler until melted and lightly browned.
