The (snowy) Second Day of Spring in Texas!!! and my meal plan too

This morning we woke up to TONS of snow. Very rare in the middle of March in Texas! We bundled up and built snowmen, had snowball fights and lots of fun.





I've caught myself in another receptive food rut. SO, I thought I would try to PLAN AHEAD and make some decent meals for my family. Thanks to the fabulous moms who link up too I'm An Organizing Junkie's Meal Plan Monday, I was able to find lots of yummy recipes to try. What Cha Got Cooking? Bite Sized Potato Skins

Tonight we went to a Super Bowl party and since I was craving potato skins, I thought it would be fun to make mini party sized version YUMMY!!!! They were are HUGE hit. You know the kind of food hit where the tray was empty in about 15 minutes and even the guys wanted to know how I made them. I used this recipe but adapted it for big bite sized potatoes. YUM

My supplies: I bought those little potatoes at Walmart and thought they would be perfect for bite sized potato skins.

Wash em up and pop them into a 400 degree oven for 20-30 minutes.
While they are baking, fry up a package of bacon. (we only eat turkey bacon at our house so my hubby was excited to see "the real thing" in my skillet.) After its nice and crisp, drain it on paper towels. Invite your favorite "bacon bit maker" to cruch those babies up nice and small! I've always wondered why they tell you to pierce potatoes, before you bake them. This guy literally exploded, as I took the potatoes out of the oven. There's my answer. Ouch.
I used my melon baller to scoop out the potatoes, it worked perfectly. Turn the oven up to 450 degrees. Turn the potatoes skin side up and brush them with canola oil. (I couldn't find my pastry brush, so I just poured a little oil in my hand and rubbed the potato in my palm. Bake them for 10 minutes. Flip potatoes over and rub with canola oil and then bake for 10 more minutes. Yum! Cover that crispy goodness with cheese and bacon bits and then either cover them to take to the party or broil them until the cheese melts. YUMMY!! Serve them with chopped chives and sour cream! They were the perfect snack for the kids and the adults. I will be making these again VERY soon!

"Milk's Favorite Cookie!"

I'm not a big sweet eater HOWEVER, if there are Oreos in my pantry, I swear I can hear them calling my name. They taunt me......begging me to just have a few. My hottie hubby, loves to slip some Oreos into the grocery cart and watch me pretend that I don't notice. I honestly think he gets a kick out of seeing me try to fight my Oreo addiction. I LOVE Oreos!!!! (He was sweet enough to always have a bag of the mini ones in the pantry waiting for me when I was going through breast feeding HELL! That's true love, my friends.)

FINALLY, I have an excuse to buy some of those cute Halloween Oreos that taunt me everytime I go to the store. LOOK AT THIS!!!!!



I just happened to come across this recipe from Nabsico World (YES, the makers of Oreo have their own world!) Now the recipe is calling my name. How could I deprive my family of such a cute and yummy treat for Halloween. YUM!!! YUM!!! YUM!!!


The NabiscoWorld folks call it Pumpkin Patch Ice Cream Dessert. How could THEY not put the name in the title of their own dessert??? Let me help them out a little...
OREO Pumpkin OREO Patch OREO Ice Cream OREO Dessert much better! ;)

Ingredients:
22 Halloween OREO Chocolate Sandwich Cookies, divided
2 Tbsp. butter or margarine, melted
1 qt. (4 cups) chocolate ice cream, softened
1 pt. (2 cups) vanilla ice cream, softened
1-1/2 cups thawed COOL WHIP Whipped Topping
Decorations, such as assorted Halloween candies and decorating gel


Preparation:
SPLIT 17 of the cookies, leaving filling on one side of each cookie. Finely crush the 17 split cookies without the filling. Place in medium bowl. Add butter; mix well. Press firmly onto bottom of 9-inch springform pan. Stand 15 of the split cookies with filling around side of pan, alternating filling sides facing in and out.
SPREAD chocolate ice cream evenly over crust. Chop remaining 5 cookies; stir into vanilla ice cream. Spread over chocolate layer. Cover; freeze 3 hours or until firm.
RUN knife or metal spatula around side of pan to loosen dessert; remove side of pan. Spread or pipe whipped topping onto top of dessert. Using colored decorating gels, make pumpkin faces on orange filling on the split cookies around side of dessert and 2 remaining split cookies. Decorate as desired to resemble pumpkin patch with assorted candies and remaining split cookies. Serve immediately.

Sara Sizzles: Fancy Schmancy Bisquits

Welcome to post #1 of Sara Sizzles. Sara is a former coworker that I just ADORED. She's one of those really neat people that has tons of interests and ALWAYS has a fabulous story to share. Sara also LOVES to cook. While we worked together she was always willing to share her recipes. Our listeners loved them and I know y'all will too! I am especially excited because Sara THE VERY FIRST contributor to my blog!! Woo Hoo.


Sara's Fancy Schmancy Biscuits
Make ‘em big to go with soup, or make ‘em bite-sized to serve with wine and cheese. Delish!

3 cups Pioneer Buttermilk Baking Mix*
1 ¼ cup milk (use whole if you can, but no biggie if you only have skim or 2%)
6 slices pancetta, chopped into about ¼ in pieces*
¾ cup Kraft Parmesan Cheese, kind in the green can
1 teaspoon Lawreys Salt*
2 tablespoons FRESH GROUND black pepper*
1/3 cup finely chopped fresh parsley (optional, but makes them pretty)
Melted butter for brushing the tops (again, to make with the pretty)

Preheat your oven to 425˚
To start, toss the pancetta in a small nonstick skillet on medium high heat for a couple of minutes to crisp it up some. It will start to darken and curl a bit like bacon, but you still want it a bit soft. Remove from heat and set aside.

In a large mixing bowl, combine Pioneer mix, milk, crisped pancetta, Parmesan cheese, parsley if you’re using it, salt and pepper in a bowl. CAREFULLY mix together, it’s really important when making biscuits not to over mix, as it will toughen the dough. Just mix until everything has come together and you don’t see anymore visible mix. The dough will be wet, this will give you moister, more tender biscuits that are stand-up-and-shout good.

Dip your fingers into some extra baking mix, and grab hunks of dough about the size right between a golf ball and a tennis ball and drop onto a greased cookie sheet, leaving at least 2 inches between each mound. Re-dip fingers after each drop to keep too much dough from sticking to your hands. Or alternately, if you are wanting to make hors de ouvres sized biscuits, you have two options. Either drop cherry sized pieces the same way on your greased cookie sheet, or grease a mini muffin tin and fill about 2/3 full. This gives them a pretty, smooth bottom that sits a bit better on a platter.

Brush tops with melted butter, and (if you really want to get crazy sprinkle with a little more Parmesan) bake for approximately 12 minutes for large biscuits, and 7 minutes for small, or until the tops are brown and everyone in the house is in the kitchen wondering what smells so good.

Serve hot or at least warm. Can be made up to 5 hours in advance and rewarmed in the oven or microwave for about 10-20 seconds.

*OKAY, NOW FOR THE FOOTNOTES!
I insist on Pioneer Brand. It’s simply the best baking mix ever, and it’s made right here in Texas. All their products are fantastic, and they have a booth at the State Fair every year. I think cream gravy out of a package is sacrilegious and bordering on child abuse, but theirs is the only kind I’ve ever used that tasted like mine and I wasn’t tempted to use as wallpaper glue.
Panchetta is an Italian style of smoked pork that is sliced very thin and is milder than bacon. You can substitute bacon in a pinch, but only use 4 pieces instead of 6, and drain it after cooking. THEY SELL PANCHETTA AT WALMART, it’s usually over by the cold cuts.
Lawreys Season Salt is one of my favorite things ever. Please don’t substitute. I know I’m starting to sound like Sandra Lee here, but brands really do make a difference!
Always, always, ALWAYS use fresh ground pepper. The flavor is so different, it’s more than just the hot black specks that preground is. Pepper actually gets hotter the longer it’s ground/cooked in things, so always grind fresh and always add your pepper last to your recipes!

Try Something New Post 2!

Welcome to post #2 of try something new. I've set a little goal for myself to start trying new things..

I'm starting with new recipes.......



Last week it was the Oven Fried Chimichangas. Which were great and even better the next day. Yesterday I made potato salad for the first time ever. I know, even my husband was surprised when I told him I had never made it before. Honestly, Dickies BBQ makes such great potato salad, if I want some I just go get their's. A lil side note, I love Roland Dickey!! He is a super funny, good old boy that can cook like no other. Back in my radio days, he would cook for us once a week. I'll see if I can dig up some of his recipes, they are easy and quick! :)


I happened upon this recipe when I was checking my e-mail and didn't even read it before I made it. I just started peeling potato's and then started adding the ingredients. I was very surprised that it had ketchup in it but decided to stay with the recipe as it was. (I did refer to my Facebook friends on whether to use mayo or Miracle Whip) the majority said mayo. (We are not big Miracle Whip fans but my mother in law swears by it, so there is always some in our fridge for her visits.)





I thought it turned out ok. I asked my in home panel of judges.... Bug asked "can I have the potato salad without the salad part?" so she had plain potato's and loved them. The hubby said it was good, but suggested that I ask his mom and Aunt Cathy for their recipe. His favorite. I giggled when I heard from Aunt Cathy....they only use Miracle Whip. LOL!!! I should have known. When I get the whole recipe, Ill post it.


Meanwhile, my friend Kellie, who "never cooks anything." Came up with a super easy recipe for soup that I LOVED!!! She had some broccoli, cauliflower and carrots, she wanted to use up before the went on vacation. She boiled them in low sodium chicken broth and then she added 2 cans of cream of mushroom soup. After it cooled she pureed it. It turned out really yummy.

Try Something New Post #1

I've set a goal for myself to start trying new things.
First and foremost NEW RECIPES!!!!
My hubby has very polietly mentioned that he would prefer that we not have the same things for dinner week after week after week. -Giggle- I have to admit, I have been in the spaghetti, tacos, pizza, chicken and rice rut. Since he is kind enough to grill me tons of chicken every week, I will be kind enough to look for recipes to spice it up in the kitchen. -wink wink-

I found this recipe on Recipe Zaar! It got a big thumbs up from everyone at the table. My hottie hubby is such a team player he will eat anything that I make. (he said to type "sort of" here, but really, if you can put Tabasco and salsa on it, he will eat it!) If there aren't any comments outside of "thanks for making dinner wife," I know not to put that one in the recipe file. Today I got a "this is good wife," which is my favorite seal approval from the hubbie. -BIG GRIN!-

I LOVE crunchy anything and these were CRUNCHY!!!! I think they would be even better with some chili and cheese poured on top but I skipped that so it wouldn't totally defeat the purpose of the "oven fried" status.

Oven-Fried Chicken Chimichangas
Ingredients
2/3 cup picante sauce or your favorite salsa
1 teaspoon ground cumin
1/2 teaspoon crushed
1 1/2 cups cooked chicken,chopped
1 cup shredded cheddar cheese
2 green onions, chopped with some tops (about 1/4 cup)
6 (8 inch) flour tortillas
2 tablespoons margarine, melted
shredded cheddar cheese, for serving
chopped green onion, for serving
picante sauce, for serving

Directions
Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions.
Place about 1/4 cup of the chicken mixture in the center of each tortilla.
Fold opposite sides over filling.
Roll up from bottom and place seam-side down on a baking sheet.
Brush with melted margarine or you can use olive oil.
Bake at 400°F for 25 minutes or until golden.
Garnish with additional cheese and green onion and serve salsa on the side.

YUMMY!!! QUICK!! EASY!! My favorite kind of recipe. Enjoy!

"Autumn is a second spring when every leaf is a flower."



I am so excited that fall is here! FINALLY I have decided to make time to start posting on my blog again! We love to play outside and have been taking FULL advantage of the beautiful weather we've been having here in Texas! Each night Bug, Daddy and I go on a walk to see the flowers at our neighbors house and to find a acorn. We leave them in our front yard in case Chip and Dale stop by and get hungry.



All is going great! It's been a little over 2 months since I became a stay at home mommy and I LOVE every minute of being at home with Bug. This wife and mommy thing is REALLY cool! Don't get me wrong, I love the radio thing but have so appreciated this opportunity to see what I am really supposed to be focusing on.... my amazing, wonderful, beautiful family!




Bug continues to amaze us with how smart she is! She loves to read books. She can recite page by page all the words of her favs like Brown Bear Brown Bear and all of our Dr. Seuss books. She loves to sing....we have to sing ALL of our songs every night before we go to bed. Rock a Bye Baby now has 4 versions, the original, Rock A Bye Bug, Rock a Bye Daddy and Rock A Bye Mommy! (If she wasn't 2 I would swear she's a champ at the whole stalling thing!)




This past weekend, we saw a preview of the new Tinker Bell movie! Bug watched the whole thing and loved having her friends there in the theatre to stand and watch with her. She liked the movie but Ariel is still her favorite of all the Disney chicks.


Mickey, of course, is still her favorite "friend." She and Minnie and Goofy travel together from room to room of the house... for picnics and to watch Mickey and friends on tv. We bought her Mickey Treats, the Mickey Mouse Halloween dvd, and she wants to watch it everyday. We bought a vintage Chip and Dale dvd and she really loves it. I have to admit so do we. It's funny how something so basic could be so entertaining.


Bug wanted a red pumpkin (I told her that we might have to paint one because I wasn't sure if red pumpkins existed.) Guess what? Thanks to a tip from a friend, we found one at Whole Foods. She was SO excited and wanted to carry it to the register...its a big pumpkin so little miss independent agreed to let me help.


Speaking of "pumpkins".... our second little angel is growing bigger everyday. I have read that she is about the size of a banana and weighs a little over a pound. If that's the case this is one big, round, active banana. We are still trying decide on the perfect name...hoping it will come to me in a dream like Bug's name did. She will be here before we know it. Bug got a "big girl room" makeover, about 2 weeks ago, and we plan to start working on the nursery this weekend.


Bug and I have been baking a lot lately and made some YUMMY banana bread on Monday. It's super easy to make the house smelled WONDERFUL!




Here's the recipe:
Banana Bread
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
We added some chopped pecans too cause like daddy says... "banana bread isn't any god without the nuts!"
1 1/2 cups of all-purpose flour
Preheat the oven to 350°F. Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour.

Sorry I haven't posted in awhile.....life has been crazy, busy! :)
We got a special studio visit from Gwen Beauchamp this morning. She's the mom from Lancaster, Texas that won the America's Favorite Recipe Award in the Pillsbury Bake Off Contest. She brought us a batch of her Toffee Banana Brownies and they were SO yummy. I was especially impressed at how moist they were...I think that's a little gift from the bananas.
I wanted to share her recipe with y'all.. Believe me, the hubby is gonna LOVE these!
By the way, it you've got a recipe that your little one's or honey LOVE, please e-mail it to me. It's always nice to have a new recipe to whip up in the kitchen.

Toffee Banana Brownies
1 box (19.5 oz) Pillsbury® Traditional Fudge Brownie Mix
1/2 cup CRISCO® Pure Vegetable Oil
1/4 cup water
3 Eggland’s Best eggs
1 1/2 cups toffee bits
1 cup Fisher® Macadamia Nuts, chopped
2 firm ripe medium bananas, cut into 1/4-inch pieces (2 cups)
1/3 cup SMUCKER'S® Caramel Ice Cream Topping

DIRECTIONS
1. Heat oven to 350°F. Generously spray 13x9-inch pan with CRISCO® Original No-Stick Cooking Spray.
2. In medium bowl, stir brownie mix, oil, water and eggs 50 strokes with spoon. Add 1 cup of the toffee bits, the nuts and bananas; stir just until well blended. Pour into pan. Sprinkle remaining 1/2 cup toffee bits over top.
3. Bake 38 to 48 minutes or until center is set when lightly touched, top is slightly dry and edges just start to pull away from sides of pan. Cool completely, about 2 hours. For brownies, cut into 6 rows by 4 rows. To serve, drizzle each brownie with caramel topping. Cover and refrigerate any remaining brownies.

"The Way To A Man's Heart Is Through His Stomach"

Kdub and I have always celebrated Valentines Day at home.....going to a packed restaurant just isn't what we consider romantic. I do love how restaurants make their dishes look "fancy." SO I have asked my coworker (a woman that rivals Martha Stewart) to share some of her "impressive but not so hard to make" recipes! (here's a hint....print this out and hand it to your honey.....tell him you'll be in the tub while HE cooks YOU dinner.)

Hearts of Romaine Antipasti With Marinated Artichoke Hearts and Balsamic Vinagarette
Serves 2-4

One bag of precut Romaine lettuce, buy the ready to serve kind so you don’t have to wash it :)
1 cup of cherry tomatoes, cut into quarters
½ cup pitted black olives (optional)
1 6oz jar of marinated artichoke hearts, preferably Cara Mia brand
1 Tablespoon balsamic vinegar
1 Tablespoon extra virgin olive oil
1 ½ teaspoon Dijon mustard
½ teaspoon salt
½ teaspoon pepper
¼ cup of Parmesan cheese, Kraft shaker kind works great

Empty hearts of Romaine into your salad bowl. Sprinkle with cherry tomato quarters and black olives. Cover with a damp paper towel and keep in the fridge. This part can be done up to two hours before serving.
To make the dressing: Drain the marinated artichoke hearts, and reserve the liquid. Scatter Artichoke hearts over the salad, and pour liquid back into the jar the artichokes came in. Add the Dijon, salt and pepper, balsamic vinegar and olive oil to the ‘choke juice, screw the lid on tightly, and shake the living daylights out of it. Pour over the prepared salad just before serving, and top with parmesan cheese.
Estimated prep time from beginning to end: 10 minutes or less

Chicken Parmigiano
Serves 2

(Tara tip: If you are REALLY pressed for time....you can make this with frozen breaded chicken patties. Cook them as the package instructs and then top with the sauce and cheese and put them in the oven long enough for the cheese to melt)

2 boneless, skinless chicken breasts
1 cup Italian-style bread crumbs *DO NOT TRY TO SUBSTITUTE PLAIN*
1 egg
1 tablespoon milk
1 teaspoon season salt
1 tablespoon canola or olive oil
1 ¾ cups pasta sauce, I like Barilla Tomato Basil, but any high quality sauce will work
1 package of sliced mozzarella cheese, the kind for sandwiches

Preheat the oven to 425°

For the chicken: Using a rolling pin or an empty wine bottle, pound the chicken breasts to a uniform thickness of about ¾ of an inch.
In a dinner plate, mix the season salt with the bread crumbs, spread them evenly over the surface of the plate, and set aside.
In a small bowl, beat the egg and milk together until throughly combined. Pour into another dinner plate.
On the stove, preheat a 12 inch nonstick skillet over medium high heat with the tablespoon of oil.
One piece at a time, coat the chicken in the egg mixture, shake to remove any excess egg, and coat in breadcrumbs, flipping each piece in the breadcrumbs to coat evenly.
Cook the chicken breasts, one at a time, until the bread crumbs brown evenly, about 4-5 minutes each side. You don’t have to worry about cooking the chicken all the way through, as they will finish cooking in the oven.
Place the cooked chicken in a 9”x13” glass baking dish, and spoon the sauce evenly over the two pieces, but don’t completely coat the top with sauce.
Pop the pan in the oven, and set a timer for 15 minutes.
While the chicken is cooking, take two pieces of mozzarella and using a heart shaped cookie cutter, cut two hearts out of the cheese. You could also cut several small hearts, or use more than one large heart on each piece. Get creative!
After 15 minutes, top the chicken with the cheese hearts. Bake for another 5 minutes.
Allow the chicken to rest in the pan for 5 minutes, and serve!

Estimated prep time from beginning to end: 45 minutes

“Tara”-misu
Serves 2-4
This totally easy version of the classic Italian dessert can be prepared a day in advance, and it’s actually better if you do!

1 package of ladyfingers, usually found in the cookie aisle
1 cup of STRONG cold coffee
3 teaspoons sugar
¼ cup of amaretto liquor *optional, but I HIGHLY recommend using it*
1 package cream cheese, at room temperature
1 pint of heavy whipping cream
1/3 cup of sugar
1 teaspoon vanilla
½ teaspoon ground cinnamon
¼ cup of sweetened cocoa powder, found in the baking aisle
butter for coating baking dish

Prep: Lightly grease an 8”x8” glass baking dish with butter. Reserve for later.
In a large bowl, beat together the cream cheese, vanilla, sugar and cinnamon until smooth. Set aside.
In another medium bowl, beat the heavy whipping cream until soft peaks form. We’re looking for Cool Whip consistency here, folks. You can use an electric mixer for both this and the cream cheese mixture if you wish, just make sure you rinse the beaters in between or the cream won’t whip properly
Scrape the beaten whip cream into the bowl containing the cream cheese mixture. VERY GENTLY fold the whipped cream into the cream cheese mixture, and reserve in the fridge for later.
In another bowl, whisk the cold coffee, sugar, and amaretto liquor together. Dip the ladyfingers, very quickly, and one at a time, into the coffee mixture. Do not let the ladyfingers get too soggy, just the outside should soften
Line the bottom of the 8”x8” pan with the soaked ladyfingers, making sure they fit snuggly against each other.
Spread half of the cream cheese mixture over the ladyfingers, and dust with half of the sweetened cocoa powder. Repeat the process once more, so you have two layers of ladyfingers and two layers of cream cheese mixture. Dust the top with remaining cocoa powder, and cover with plastic wrap. Refrigerate until ready to serve, and cut into squares to serve.

I have ALWAYS loved Halloween........

But now that we have Bug is SOOOOO much more fun. She loves to wave at the inflatables in our neighbors yards and loves the ghosts and pumpkin decorations that we have in our house. FUN!!! FUN!!! FUN!!!!.

Roasted Pumpkin Seeds
Ingredients: pumpkin seeds, clean and dry, 2 tablespoons of cooking oil, salt
Cooking Instructions: Place pumpkin seeds in a zipper bag and coat with oil. Spread onto a cookie sheet and salt lightly. Bake at 250 degrees F for 45 minutes. YUM!
